La inducci\u00f3n calienta exclusivamente el recipiente que contiene los alimentos, sin calentar el aire circundante. Por ello, las superficies de la campana permanecen m\u00e1s fr\u00edas.<\/p><p data-start=\"229\" data-end=\"506\">Cuando los vapores calientes y ricos en humedad ascienden hacia la campana, encuentran superficies a una temperatura inferior. La humedad presente en el aire se transforma r\u00e1pidamente en gotas de agua. Estas gotas caen sobre la placa de cocci\u00f3n e incluso sobre los alimentos.<\/p><p data-start=\"508\" data-end=\"677\" data-is-last-node=\"\" data-is-only-node=\"\">Este fen\u00f3meno depende exclusivamente de una simple ley f\u00edsica: la diferencia de temperatura entre los vapores calientes de cocci\u00f3n y las superficies fr\u00edas de la
